Sand Pumping Jetty 10 August

Hi Guys,

Fished 4-6.30am today for 3 Tailor. There were only 3 Fishos when I arrived so I expected a lean session. The Vietnamese guys were noticeably absent. Sea conditions and a light Westerly made it perfect but the Tailor schools did not show. All up, I saw 5 small Tailor landed. May try the beach next trip.

Good stuff Joe, out of interest how do you prepare your tailor for cooking, I love eating tailor and have tried them most ways , appreciate if you can respond

Hi MSB! I like to pan fry whole or cut-up pieces of Tailor and serve with chips, rice or salad. Chinese like to steam fish with julienne ginger, shallot and light soy sauce. We also like to poach fish in a broth with vegetables and served with rice. Our family favourite is to lightly salt and rub oil onto Tailor and grill the fish over charcoal. Using rice paper we make rolls using fish, salad, herbs and Vermicelli. We also add Tailor in our Seafood Curry. There are so many more recipes. Cheers!

Thanks for the report, still a good feed there. Westerly winds do make a difference.

It must have been bit cold , looks like you got waders on.

I was reading your recipe regarding various tailor cooking, it's nice to be versatile.

    Did the steamed fish recipe last night came out a treat, now if I can catch a couple more tailor tonight I am going to try the charcoal recipe , thank you for your response and good luck with the fishing

    That great MSB! The internet has a wealth of knowledge on fish recipes too. Different fish have different recipes bcos of the meat texture. When grilling fish over charcoal it can burn quickly so ensure the charcoal is low to medium in heat. If the fish is over 1kg, score the shoulders so it will cook evenly with the rest of the fish. And a lid on the fish will hasten the cooking process. Cheers!
